We were looking at expanding our fish taco offering. Our food cost was too high for what our customers were willing to pay so we called IPS looking for cheaper options. They came out and took us through an audit process. After completing the process they were able to provide a custom cut piece of Mahi Mahi that gave us consistent sized pieces in every case. This helped us control our portion cost and make a healthy profit from the plate. Being able to trust the food cost gave us the confidence to aggressively promote the item. Our Mahi Taco is our biggest seller now.
